Ingredients:

  • 1 can organic black beans (rinsed and drained)
  • 1 bag of organic frozen corn (rinsed and drained)
  • 3 tomatoes seeded and chopped
  • 2 avocados chopped
  • 3 green onions chopped
  • 1 small red onion chopped
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • ⅛ tsp. garlic powder
  • 1 tsp. of parsley
  • 1 tsp. of cilantro
  • pinch of sea salt and pepper

Directions:

  1. Mix oil, vinegar and seasonings and toss over remaining ingredients.
  2. Let sit for a few hours to allow flavors to blend.
  3. Serve with Guiltless Gourmet Organic Baked Blue Chips or any organic stone ground tortilla chips. Also good as a filling for tacos or burritos.
