BOOK REVIEW:

“Sugar Blues”
By William Dufty, Warner Books Inc., © 1975, reissued on April 1993

William Dufty shares a story of how he met Gloria Swanson and -- as his dedication in the book states -- “how her life changed my death.” With a dedication like that, I had to read this book. It was his chance meeting with her that led him to start considering the effects that sugar has on the body and how it affected his own health. His book goes into great detail about the history of sugar, where it came from, how it was used then and now, how it became so prevalent and popular, how it began to subtly invade our food, our beer and other alcohols as well as our medication and tobacco. This book is scary. He talks mostly about sugar and touches also on artificial sweeteners, too, but what he says about sugar is quite enough to stop you in your tracks. He describes how his own health was failing him and how getting off of sugar made his symptoms disappear.

He refers to people like Linus Pauling and others (on page 62) who feel that mental illness is a myth and emotional disturbances are just “the first symptom of the body’s inability to handle the stress of sugar dependency.”
It’s amazing to read about the emergence of so many illnesses that correlate to the popularity of sugar consumption. In his mapping of the history of sugar, he tells about scurvy and pellagra. He explained the importance of eating brown unpolished rice versus refined white polished rice and how brown unpolished rice consumption reduced infant mortality rates in Singapore during World War II. White polished rice lacks B vitamins as well as a few others and eating it will create an imbalance in the body. The body needs those nutrients to digest the food, so it goes looking within the body to take those nutrients from you, thus leaving you deficient when you consume this type of processed food.
Starting on page 219, he provides healthy recipes that are simple enough for the average person to easily prepare at home. I’ve included one of them as this month’s recipe for you all to try.

Reading this book was an education in itself and helped to frame my attitudes about what is a whole food. It’s the individual’s responsibility to insure that the food one consumes is what it appears to be, because according to Dufty, the manufacturers are neither concerned nor held accountable for that which they manufacture. They are out to make a profit and they will use whatever marketing techniques are available to accomplish their goals. It’s up to each consumer to stay educated and be aware. I recommend this book as a must-have for your personal library. It’s in paperback and costs $6.99 [ISBN 0-446-34312-9].


QUICK RECIPE:

Double Corn Soup
from “Sugar Blues” by William Dufty, page 220 and adapted by Chris Sandy, CHHC

Preparation time: 10 minutes
Cooking time: 1 hour
Yields: 4 servings

2 Medium sized Onions, chopped
2 Tablespoons of Olive Oil
½ cup of yellow or white corn meal
4 cups of water
Tamari (as a condiment)

Optional: add 1 green pepper, chopped; use Bragg’s Amino Acids {http://www.bragg.com/products/liquidaminos.html}
instead of Tamari to make this dish gluten-free; add 2 hot peppers chopped

Saute chopped onions (and optional green pepper and hot peppers) in olive oil. When the onions are golden, add corn meal and stir. After the corn meal has simmered for a couple minutes, begin to add water to make a gravy consistency. As the mixture thickens, add more and more water. Let this simmer for 1 hour.

Shortly before serving, add kernels of fresh corn (either off the cob or use organic frozen corn that has been thawed completely). Serve with tamari or Bragg’s Amino Acids.

Chris Sandy, CHHC, has received her certification from the American Association of Drugless Practitioners and is a graduate of the Institute for Integrative Nutrition in Manhattan. She has a holistic health counseling practice in Marlton, NJ, Philadelphia, PA, and Manhattan. She has recently joined Rose Payne in partnership at High Level Wellness. Chris specializes in working with clients who have severe food allergies (especially celiac sprue – an allergy to gluten), difficulty with weight loss, and women’s health, particularly menopausal issues.
