BOOK REVIEW:

“Eat, Drink, and Be Healthy: The Harvard Medical School Guide to Healthy Eating”
By Walter C. Willett, M.D., Simon & Schuster, © 2001

In this book, Dr. Willett tries to steer people away from the Food Guide Pyramid developed by the U.S. Department of Agriculture (USDA) by shooting holes in it. The major issues that he has are: it claims all fats are bad, all complex carbohydrates are good, that protein is protein, and that dairy is essential to one’s diet. It also fails to give guidance on weight, alcohol, vitamins, and exercise. He introduces his version of the pyramid and calls it the Healthy Eating Pyramid. In it, he says that you don’t have to count calories or fat grams. This eating strategy offers ways to make simple changes in small increments. His section on body mass and obesity discusses how to avoid and prevent cardiovascular disease later in life by exercising, and modifying the diet to follow the Healthy Eating Pyramid. The chapter on fats is somewhat dry reading but thoroughly and scientifically differentiates between good fats (high-density lipoproteins -- HDL) and ones that are bad. I liked how he described simple and complex carbohydrates and why they matter to the body. He recommends protein in moderation, whether it is soy or animal meat. After recommending that we eat lots of fruits and vegetables, he rounds off the book by saying you should take a multivitamin for extra insurance. The vitamins he recommends are not expensive, in fact, he tends to like them if they are inexpensive. At the end of the book, he offers easy to prepare recipes. All in all, I’d say this book was very helpful even in its scientific approach to nutrition.


QUICK RECIPE

Boiled Greens with Miso-Walnut Dressing

Preparation time: 5 minutes
Cooking time: 15 minutes
Yields: 4 servings

1 small bunch greens: collards, kale, mustard....
3 tablespoons walnuts, dry roasted and chopped fine
2 tablespoons barley miso
1-2 teaspoons lemon juice
1/2-3/4 cup water

Boil or steam the bunch of greens, leaving them whole. Allow greens to cool and drain before slicing.

To make dressing, place the walnuts in a suribachi and grind them finely, but not to a paste. Add the miso and grind more. Add the lemon juice and mix; add water to taste and mix again. Serve the dressing over the boiled greens.

Chris specializes in working with clients who have severe food allergies (especially celiac sprue – an allergy to gluten), difficulty with weight loss, and women’s health, particularly menopausal issues.
