What’s The Story On Protein?

Dr. Walter C. Willett of the Harvard Medical School and author of the book "Eat, Drink and Be Healthy" states, “your body is home to at least ten thousand different proteins, which make up your hair, skin, muscles and a multitude of enzymes that keep you alive and active. The latest wave of high-protein diets has kindled a new found interest in the health benefits/drawbacks from ingesting too much or to little protein in a healthy diet. Protein has been studied far less intensely than carbohydrates and fats creating a list of questions including how much is sufficient for good health and if it matters whether your protein comes from animal or vegetable sources.

Protein is made up of twenty or so basic building blocks we call amino acids. Because our body is constantly making new proteins we do not store amino acids as we do fats, we need a daily supply of protein. Some dietary proteins are complete meaning they contain all of the amino acids needed to make new protein. Others are incomplete, lacking one or more essential amino acids-one can’t make form starch or convert form other amino acids. Meat, poultry, fish, eggs and dairy products tend to be good sources of complete proteins while vegetable protein is often incomplete. That’s why it is important for vegetarians to eat combinations that complement each other such as rice and beans, peanut butter and bread, tofu and brown rice.

How much do we need? The real answer is nobody knows but from research gathered so far the best general guess is around 8 grams for every twenty pounds of weight. So the average healthy adult woman needs less than 60 grams while the average healthy male requires less than 80 grams. When people are overweight it is best to base protein needs on your ideal weight for your height and bone structure. It is uncommon for healthy adults in this country to have a protein deficiency because it is very easy to attain these levels in an ordinary day making protein gram counting unnecessary unless you are eating a strict vegan diet. “

One of the best and healthiest sources of protein is from stock or broth comprised of bones from different animals. In traditional times every part of the animal was used. Bones from animals contain minerals and electrolytes that are easy to assimilate. Adding vinegar during cooking helps to draw out the minerals especially calcium, magnesium and potassium into the stock. Another important ingredient that is generated when making stock is gelatin, which aids in digestion and is helpful in the treatment of many intestinal disorders including colitis and Chron’s disease.

Making your own stock is time consuming but well worth the effort. By making large batches you can have enough leftover to freeze for future use. Many health food stores and Asian markets will have prepared stock available. This is an easy way to attain benefits from broth if you don’t have time to make it from scratch. If you’re up to the task, here is a recipe that is absolutely delicious and full of nutrition!


CHICKEN STOCK
Sally Fallon, Nourishing Traditions

1 whole range free chicken or 2-3 pounds of bony chicken parts, such as necks, backs, breast bones and wings
gizzards from 1 chicken (optional)
feet from the chicken (optional)
4 quarts of cold filtered water
2 tablespoons of vinegar
1 large onion coarsely chopped
2 carrots, peeled and coarsely chopped
3 celery sticks, coarsely chopped
1 bunch of parsley

If you are using a whole chicken, cut off the wings and remove the neck, fat glands and the gizzards from the cavity. By all means use chicken feet of you can get them-they are full of gelatin. (Jewish folklore considers the addition of chicken feet the secret to successful broth.) Even better, use a whole chicken, with the head still on. These may be found in Oriental markets. Farm raised, free-range chickens give the best results. Many battery-raised chickens will not produce stock that gels.

Cut chicken parts into several pieces. (If you are using a whole chicken, remove the neck and wings and cut them into several pieces.) place chicken or chicken pieces in a large stainless steel pot with water, vinegar and all vegetables except parsley. Let stand 30 minutes to 1 hour. Bring to a boil, remove scum that rises to the top. Reduce heat, cover and simmer 6 to 24 hours. The longer you cook the stock, the richer and more flavorful it will be. About 10 minutes before finishing the stock, add the parsley. This will impart additional mineral ions to the broth.

Remove whole chicken pieces with a slotted spoon. If you are using a whole chicken, let cool and remove chicken meat from the carcass. Reserve for other uses, such as chicken salads, enchiladas, sandwiches or curries. (The skin and smaller bones, which will be very soft, may be given to your dog or cat.) Strain the stock into a large bowl and reserve in your refrigerator until the fat rises to the top and congeals. Skim off this fat and reserve the stock in covered containers in your refrigerator or freezer. Use stock as a base for soups, sauces and grain dishes.

Rose Payne is a certified Holistic Health Counselor and educator, with a private practice in Manhattan, NY and Marlton, NJ. She is also an assistant teacher at the Institute for Integrative Nutrition in NYC. Her passion is helping clients to transform their lives through the power of nutrition. Her sense of humor combines with a kindhearted, intelligent and practical approach to guiding people to vital healthy lives.
Rose is also the Holistic Nutrition writer for Cuizine Magazine.

Chris Sandy received her certification from the American Association of Drugless Practitioners and is a graduate of the Institute for Integrative Nutrition in Manhattan. After creating her own practice called Active Nutrition and working in Manhattan, NY, Marlton, NJ, and Philadelphia, PA, she joined in partnership with Rose Payne at High Level Wellness in 2003. She specializes in working with clients who have severe food allergies such as celiac sprue – an allergy to gluten, difficulty with weight loss, and women’s health, particularly menopausal issues.

Celeste Simon, CHHC, is a graduate of IIN and accredited by AADP. Celeste also completed the “Teachers Cooking School Training” program at IIN and has received additional training in macrobiotic cooking and foods. With her avid interest in holistic health, wellness and spirit as well as her desire to continue to research and share natural and complimentary alternatives Celeste is an exemplary counselor and member of the HLW community.
