Holy Cow! What does Mad Cow Disease mean to you?

The latest headline on most major newspapers is “Mad Cow has hit the USA”. It was just a matter of time after cases were first diagnosed in Britain and Canada in the late 1980’s that we would have to deal with this problem in our own cattle. Although cases have been found in other species like mink, deer and skunk until recently we have been spared evidence of this disease infiltrating our own food supply.

Mad Cow is spread to the human population through the consumption of contaminated beef or dairy products or contact with bone meal, tallow or other products made from cows. Although only two cases has been documented to date; current testing procedures as well as cow raising practices are not sufficient to give an accurate reporting. What can you do to ensure the safety of you and your family from this moment forward?

The official name for the disease is bovine spongiform encephelopathy and the human form is known as variant Cruetzfekdt-Jakob Disease according to Mishio Kushi and explains it in great detail as follows:

Symptoms include loss of coordination, nervous dysfunction and spongy holes in the brain. The disease affects the brain and central nervous system and all cases to date have been fatal. Nearly 1 million cattle and about 125 people have died, although the incubation period of 10 years or more may result in thousands, hundred of thousands, and even millions of human deaths in the future. There is no medical treatment or cure. The disease is believed to be spread by prions, infectious rogue proteins in the body that are impervious to boiling, pasteurization, or radiation. It affects predominantly younger persons age 15 to 40, including vegetarians who have not eaten meat in over a decade but who have eaten dairy food.

Mad Cow Disease emerged following the introduction of rendering, a new food recycling technology in which British cows were fed ground animal parts including the carcasses and inedible parts of sheep and other cows, road kill and euthanized pets from animal shelters. Scrapie a brain disease that affects sheep, evidently passed to the cattle and evolved into BSE, which in turn passed to humans. An alternative theory is that BSE originated from the spread of organphosphate pesticides that the British government required farmers to use on their cattle to kill warble fly, a parasite. The chemical used in the treatment is similar to thalidomide a drug that resulted on deformed babies a generation age.

Since prions contain no DNA, it is not known how they reproduce and spread in the body. Lack of DNA is very yin. It is not natural for cows, which normally are vegetarian and eat grass to consume animal food, especially other cows. When yang animals such as cows take in yang foods (other cows) it changes into yin. The cows fed rendered meat become weaker, degenerate, and begin to lose DNA in the yang center of their cells. Extreme yin manifests as prions and yin energy rises and expands appearing as holes in the brain. The intestines, pancreas and reproductive organs may also be affected. Overall this is the same process by which the modern diet is leading to infertility allergies and immune function disorders. Sugar, alcohol, drugs, and chemicals, especially in combination with animal foods are causing the DNA in sperm and eggs to lose vitality. Good quality grass fed beef, which may be found in Whole Foods Markets as well as your local Shop Rite, is the safest beef to ingest although reducing or eliminating cow from your diet would be a healthy alternative. Hamburger is especially suspect, because it may contain cow’s brain which is how prions for Mad Cow are transmitted. Vegetarians who consume dairy products are not immune and should select organic grass fed dairy products including cheese, milk and butter if they continue the use of this product in their diet.

The incubation of 10 to 30 years before symptoms appear may mean many are already infected with this disease. Organically grown brown rice, sesame seeds and pumpkin seeds are especially helpful in strengthening DNA and we have included a recipe below that will strengthen blood. Adding these to your diet may boost your ability to naturally fight off damage already done to your overall health from ingesting beef and dairy.

Carrot Blood Strengthener

The Self-Healing Cookbook by Kristina Turner
This traditional Japanese side dish (called Kinpira) can warm you to the toes in cold weather, build your stamina by improving blood quality, and increase your mental clarity!

1 carrot, cut julienne
1 cup burdock, cut julienne (or if unavailable, use parsnip or rutabaga)
¼ teaspoon sesame oil
tamari oy sauce

Slice the carrot and burdock in long thin diagonal slices. Cut each slice into matchsticks.
Sauté burdock lightly in an oiled skillet stirring over medium heat.
Add carrot, and ½ inch of water.
Boil, then cover and simmer 20 minutes.
Check and add water of needed but let it all get absorbed at the end for best flavor.
Sprinkle lightly with tamari and stir.
Serve small portions.
Note: For added flavor add a couple of drops of toasted sesame oil before serving.

Rose Payne is a certified Holistic Health Counselor and educator, with a private practice in Manhattan, NY and Marlton, NJ. She is also an assistant teacher at the Institute for Integrative Nutrition in NYC. Her passion is helping clients to transform their lives through the power of nutrition. Her sense of humor combines with a kindhearted, intelligent and practical approach to guiding people to vital healthy lives.
Rose is also the Holistic Nutrition writer for Cuizine Magazine.

Chris Sandy, CHHC, has received her certification from the American Association of Drugless Practitioners and is a graduate of the Institute for Integrative Nutrition in Manhattan. She has a holistic health counseling practice in Marlton, NJ, Philadelphia, PA, and Manhattan. She has recently joined Rose Payne in partnership at High Level Wellness. Chris specializes in working with clients who have severe food allergies (especially celiac sprue – an allergy to gluten), difficulty with weight loss, and women’s health, particularly menopausal issues.

Celeste Simon, CHHC, is a graduate of IIN and accredited by AADP. Celeste also completed the “Teachers Cooking School Training” program at IIN and has received additional training in macrobiotic cooking and foods. With her avid interest in holistic health, wellness and spirit as well as her desire to continue to research and share natural and complimentary alternatives Celeste is an exemplary counselor and member of the HLW community.
